Ingredients

    8oz whole wheat penne pasta
    1 medium onion, chopped
    2 large cloves garlic, crushed
    1 Tbsp olive oil
    2 Tbsp smart balance butter
    2 Tbsp all-purpose flour
    2 1/2 cups fat-free half and half
    1 cup Parmesan cheese, grated
    2 tsp Italian seasoning
    salt and pepper to taste
    1 14.5oz can diced italian tomatoes
    1 10 oz package chopped frozen spinach

Directions

In a large pot of boiling water, cook pasta until al dente. In a small saucepan, saute onion and garlic in olive oil until soft. In a large saucepan, melt butter; add flour and stir. Slowly add half and half and half and simmer, stirring constantly, until thickened. Add cheese and seasonings; stir until cheese melts. Add tomatoes, spinach and onion mixture, heat through. Pour over warm pasta, toss and serve.
