Ingredients

    BANANA BREAD LIGHT2011

    Use at least a 2 quart bowl for liquids and at least a 4 quart for the dry (this is a double batch, 3 loaves)

    Preheat the oven to 350 degrees.

    Mix all dry goods in one bowl:
    1.3 cups whole wheat flour.
    2.1 cup regular, processed flour
    3.1 cup wheat bran
    4.1 ¼ cup artificial sugar
    5.2 teaspoons baking soda
    6.2 teaspoons salt
    7.2 Tablespoons nutritional yeast
    8.2 Tablespoons ground flax seed
    9.2 cups nuts

    Mix all liquids in a second bowl
    1.½ cup margarine (I usually melt the margarine then mix in the sugar)
    2.1 ½ cup sugar
    3.½ cup unsweetened applesauce
    4.1 cup artificial egg product (or eggs)
    5.3 cups mashed bananas
    6.1 cup buttermilk
    7.2 teaspoons vanilla


    Use PAM “Baking” spray, or equivalent, to coat the 3 large loaf pans. The baking spray will have flour in it.
    After mixing the dry and then the liquid, pour the liquid into the dry and mix together.
    Pour the mix equally into 3 large loaf pans and put in oven
    Bake for 20 minutes then cover (aluminum foil?) and bake for another 20 minutes. Do the toothpick check, the 40 minutes usually does it for me.
