    3 boneless, skinless chicken breasts
    1/2 C Egg Beaters
    1 C Fiber One original cereal
    1/2 C Pepperidge Farm cornbread stuffing, dry
    1 tsp garlic powder
    1 tsp onion powder
    1/2 tsp Tony Chachere's Original Creole Seasoning


Preheat oven to 375 degrees. Prepare for baking by using a shallow pan with an UNCOATED cooling rack laid on top. Spray the cooling rack with cooking spray.

Clean and trim chicken breasts, then cube. (Size depends on your preference, but I make them about half the size of a ping-pong ball. Remember--they will shrink a bit once cooked!)
Combine the dry ingredients and seasonings in a food processor until the cereal and stuffing are small crumbs. Pour the dry mixture into a bowl.
Pour egg beaters into a bowl.
Dip the chicken chunks one-by-one into the egg beaters, then roll in the dry ingredients. Space dipped and rolled chicken onto the prepared cooling rack. After all pieces have been prepared, bake for 30 minutes, or until internal temperature has reached 160 degrees.

Serving Size: About 4 oz to serving size. Number of servings depends on size of chicken breasts.
