Introduction
This lowfat version of egg salad is great on a toasted Thomas Light Multigrain English Muffin! It has that same yummy taste of deviled eggs but Pampered Chef's Two Sister Gourmet Over the Edge Herbed Spinach seasoning gives this a unique and full flavored taste. This recipe is completely my own, "thrown" together one night :) This lowfat version of egg salad is great on a toasted Thomas Light Multigrain English Muffin! Ingredients

6 large white eggs, hardboiled
6 slices Oscar Mayer Turkey Bacon
4 1/2 tbsp Grey Poupon mustard
1 cup Miracle Whip Light
1 tsp minced onion
1 tsp Two Sisters Gourmet Over the Edge Herbed Spinach (available through a Pampered Chef representative)
1 tbsp ground turmeric (more or less to taste)
Optional: Accent seasoning
Directions
1.) Hard boil your eggs.
2.) Dice up your turkey bacon and fry in non-stick pan.
3.) Combine all other ingredients in medium mixing bowl.
4.) When eggs are done boiling, plunge them in bowl of cold water and ice cubes for easier peeling.
5.) Peel and dice eggs (add optional Accent seasoning now)
6.) Add diced egg and bacon to bowl of other ingredients and mix throughly.
7.) Serve!
* This goes great on whole wheat toast or whole grain english muffin!
