Quark 0,2% Fett, 125 gram(s) ()
White Rice, short grain, 125 grams ()

Granulated Sugar, 50 grams ()
Egg, fresh, 2 large ()
*Peaches, canned, extra light syrup, 1 cup, halves or slices (remove) (I actually prefer fresh peaches or sweet cherries and make it with either of those but this is the recipe as given)
Salt
Grated lemon rind
Optional: Butter, breadcrumbs for top ( I don't use either and that reduces the nutritional values as does using fresh fruit and Agave syrup for the sugar)
Directions
Serving Size: 2 servings
Bring milk to boil, add (washed) rice. Simmer in covered pot for 25 minutes on low heat.
Put aside to cool slightly.
Divide eggs. Beat suggar with egg yolks until foamy, add the lemon zest (of one organic, washed lemon). I used dry because I didn't have organic lemons in the house.
Add quark by the spoonful and mix well until smooth. Add the cooled Rice in small portions and mix well.
Beat the egg whites until stiff peaks and fold them into the rice mix.
Let peaches drain and add them carefully to the mix.
Pour into oven proof which was lightly coated with butter. Evenly sprinkle the breadcrumbs and then add the mix. Sprinkle remaining bread crumbs over the top and add little flecks of butter.
Bake in oven for 45-50 minutes until golden brown at 350 C degrees.
