Introduction
I've tried and tried to make a low cal blueberry muffin recipe. Every recipe I've tried, I've hated. I took my recipe and substituted my "bad" ingredients for healthier choices and finally got what I wanted out of a low calorie, but delicious blueberry muffin. Ingredients

1/2 c. Olivio Margarine
1 c. Ideal No Calorie Sweetener
1 tsp. Vanilla
1/2 c. Egg Beaters
1/4 tsp. Salt
2 c. Flour
1 tsp. Baking Powder
1/2 c. Skim Milk
1 c. Blueberries
Directions
Preheat oven to 375 degrees F.
Prepare muffin tins.
In bowl mix margarine, sugar, vanilla and eggs until smooth.
In small bowl mix flour, baking powder and salt.
Add dry ingredients to mixture and beat together, gradually add milk. Fold in blueberries.
Scoop in 2 Tbsp mixture into muffin tins.
Bake for 15-18 minutes.
