Introduction

Lots of flavor, we love to eat this over sticky white rice. But I substitute it for baked beans and serve it with grilled items, especially fish. Lots of flavor, we love to eat this over sticky white rice. But I substitute it for baked beans and serve it with grilled items, especially fish.

Ingredients

    3 Slices of Bacon
    1 1/2 cups of dry lentils
    1 medium size carrot (peeled & chopped)
    1 Stalk of celery (chopped)
    1 medium onion (chopped)
    3 cloves of garlic (minced)
    2 cups low sodium, 99% Fat Free Chicken Broth
    1 Tbsp of Tomato Paste
    salt & pepper

Directions

Heat a pot over medium. Once hot add three slices of bacon and brown until crispy (about 7-8 minutes.) Remove bacon from pan and set aside on paper towel. Leave about 1 - 2 Tbsp of bacon drippings in pan and discard any extra. Add carrots (3-4 minutes) to pan and heat until slightly softened. Add onion, garlic and celery. Add Salt & pepper 2 tsps or so. Heat until softened (2-3 minutes.) Add lentils to pan and stir 2 minutes. Add tomato paste to deglaze pan. Add chicken broth to pan and turn stove to high to bring to a boil. Allow to boil 2 minutes then add bacon the reserved bacon chopped. Stir and cover. Reduce heat to medium low and let cook for about 20 -25 minutes, until almost all liquid is absorbed and lentils are soft.
