A quick and easy cucumber soup that is sure to please even if you don't like cucumber's raw. Served Chilled, this is a perfect compliment to any dish and an easy way to get your veggies too! Ingredients

    1 large cucumber, peeled, sliced in half, seeded, and diced.
    1 Haas Avacado, skin and seed removed, diced
    1 cup Plain, Nonfat Yogurt
    1 cup Chicken Broth
    1 dash salt (optional)
    1 dash pepper
    1 pinch McCormick Dill Weed


Directions

Throw ingredients into a blender, puree for about 2 minutes until creamy or desired consistancy is reached. Place in soup bowl and chill for about 1 hour while making the rest of your dinner. Garnish with diced tomatoes.

Serving Size: Makes 2 or 3 1-cup servings
