Ingredients

    One 6 oz. package Farmhouse® Rice Pilaf
    1 clove garlic, minced
    1 teaspoon grated lemon rind
    1 Tablespoon olive or vegetable oil
    2 cups water
    1 teaspoon oregano
    1 cup sliced scallions
    1/4 cup frozen spinach, thawed and squeezed dry
    1 cup chopped fresh tomato
    1/4 lb. finely crumbled feta cheese
    1/4 cup chopped fresh parsley
    1/2 cup black olives, halved
    1 Tablespoon lemon juice
    2 teaspoons chopped fresh dill

Directions

1.In a large saucepan, sauté garlic and lemon rind in oil.
2.Add water and oregano; bring to a boil.
3.Add rice and contents of seasoning packet; return to a boil and add scallions.
4.Reduce heat to low; cover and cook 20 minutes.
5.Gently combine cooked rice mixture with spinach, tomatoes, cheese, parsley, olives, lemon juice, and dill.

Serving Size: Makes about four 1&1/2 cup servings
