Ingredients

    2 cloves garlic
    1 big poblano pepper
    1 jalapeno pepper
    1 serrano chili
    2 cups corn
    1/2 cup diced onion

    1 15 oz can crushed tomatoes (no seasoning)
    1 15 oz can diced tomatoes (no seasoning)
    1 small can tomato paste
    1 15 oz can vegetable stock
    1 Tbsp chili powder
    2 Tbsp ancho chili powder
    2 tsp cumin
    1 can small red beans
    1 can pinto beans
    1 can chili beans
    (or whatever beans you prefer)

Directions

1. In a large pot with some oil, fry up the garlic, peppers, and onion until the vegetables are soft (if you are using frozen or fresh corn, include it here, but if you are using canned corn, add it with the beans)
2. Add to the pot the crushed tomatoes, diced tomatoes, tomato paste, vegetable stock, chili powders and cumin.
3. Stir to combine and bring the contents to a simmer for 15-20 minutes.
4. add the beans (and corn, if canned) and cook 5 more minutes until heated through

Serve with corn bread!
