Number of Servings: 6

Ingredients

    Lean Ground Turkey 16 0z
    2 cups Salsa
    Canned tomatoes ( I use low sodium)
    Instant rice 1 cup ( can use more)
    6 large green pepper
    large onion
    2% cheddar cheese 3/4 cup
    2 cups pasta sauce (marinara)

Directions

place chopped onion, canned tomatoes, and ground turkey in pan, brown. #/4 through cooking add 1 cup water and 1 cup instant rice. Stir and cook thoroughly. Cut tops off green peppers, remove seeds and guts. Pack approximatley 1 cup of meat mixture into green pepper. Sprinke cheese on top of pepper and meat mixture. Replace the top of the pepper. Mix salsa and marinara pour 1/3 of mixture into bottom of slow cooker (line for easy cleanup) placve peppers in slow cooker anmd cover with remaining sauce. Cook on low-medium heat until tender 4-6hrs depending on cooker.

Serving Size: makes 6 whole stuffed peppers
