Introduction
These are not sweet, but good nonetheless. The recipe is based off of one from King Arthur Flour. They're quite hearty and super healthy. Feel free to add dried fruit/nuts in place of the blueberries, and change up the spices if you want. Also, I half filled the muffin cups to get 39 muffins, which yielded smaller muffins. Ingredients

4 cups wheat bran
2 cups white whole wheat flour
4 tsp cinnamon
4 tsp baking powder
2 cups skim milk (nonfat milk)
2 tsp baking soda
2 large eggs
1/2 cup applesauce (unsweetened)
12 packets Splenda
1/2 cup water
2 cups blueberries (fresh or frozen)
Directions
1. Mix wheat bran, flour, cinnamon and baking powder in large bowl.
2. Mix skim milk and baking soda in separate bowl.
3, Beat eggs into milk mixture.
4. Add milk mixture to dry ingredients.
5. Stir together Splenda and applesauce, and add to mixture in large bowl.
6. Stir in enough water to make muffin dough consistency, about 1/2 cup.
7. Stir in blueberries or other fruit desired.
8. Spoon into well greased muffin tins and bake in preheated oven at 375 deg F for 15-18 minutes.
