Introduction

Ingredients

    3.4 C PC Blue Menu Red Kidney Beans (no salt added)
    3 C Plain Tomato Sauce
    1/2 C Water
    4 TBSP Ground Coriander
    1/2 TSP Ground Cumin
    3 TBSP Sea Salt
    1/2 TSP Cayenne Pepper (add more for desired spice level)
    1 TBSP Ground Tumeric
    1 TSP Black Pepper
    2 TSP Garlic
    1 1/2 C Red Onions
    2 TBSP Olive Oil

Directions

Chop Onions finely and put aside.
Chop garlic and put aside.
Heat Olive oil on Medium high.
Test heat by adding a couple pieces of onion, if sizzles, then it's hot enough.
Add onions and stir occasionally, cooking until onions appear glassy then add garlic and cook for about 1 minute, then add tumeric and cook for 20 seconds.
Add Tomato Sauce and Water and stir.
Add Coriander, Cumin, Cayenne and Salt and Pepper.
Stir and let cook for about 5 minutes, stirring ocassionally.
Taste sauce to test saltiness and spice, add more salt or spice if desired.
Add beans and stir.
Leave on Medium and stir ocassionally for about 30 minutes.

Serving Size: Makes 8 half cup servings
