Introduction

These are DELICIOUS. My kids love them. The oil in the panko makes them nice and crispy. The wire rack makes them cook quickly and evenly. The reheat nicely as well. These are DELICIOUS. Ingredients

    Cut chicken into strips

    Combine 1 TBSP light mayo, 1 TBSP dijon mustard, egg white and 1TBSP of water.
    Combine Panko Bread crumbs, 1 TBSP of olive oil and 1 tsp of cayanne pepper.
    Dip chicken in egg mixture and then dip into panko mixture
    Bake until golden on each side in 400 degree oven

Directions

Preheat oven to 400 degrees. Place a cooling rack over a cookie sheet and spray with olive oil spray or non-stick spray. Place coated chicken on wire rack. Cook for 5-10 minutes on each side till golden on each side. Flip and cook second side.
