Ingredients

    1 can black beans rinsed and drained
    1 1/2 cup fresh or frozen corn
    1 large red sweet pepper diced
    1 small red onion diced
    2 large tomatoes seeded and choppped or a package of grape tomatoes quartered
    2 cloves garlic minced
    1-2 jalapeno peppers finely diced (optional)
    Dressing
    1/2 cup light Italian salad dressing
    1- 2 tablespoons cilantro minced
    1- 2 tablespoons lemon or lime juice
    1/2 - 1 teaspoon cumin

Directions

Combine vegetables and beans in medium bowl. Wisk together dressing ingredients, pour over bean mixture, stir and chill.

Serving Size: makes 6, 1 cup servings
