A simple method of making a super-tasty and flavourful Key Lime pudding, perfect for the summer! Can also be used as a pie filling in a prebaked graham shell. A simple method of making a super-tasty and flavourful Key Lime pudding, perfect for the summer! Can also be used as a pie filling in a prebaked graham shell.
Number of Servings: 6

Ingredients

    1 ½ cups fat free plain soymilk
    2 tsp vanilla
    1/2 cup sugar
    1/4 cup cornstarch
    1/4 cup Key lime juice
    1/2 teaspoon finely grated lime peel
    2 cups thawed fat-free whipped topping (optional)

Directions

In 1-quart saucepan stir together soymilk, sugar, cornstarch, Key lime juice and lime peel with wire whisk until cornstarch is dissolved.
Heat to just under boiling, stirring constantly.
Cook 1 minute, continuing to stir.
Remove from heat and cool.
Cover surface of pudding mixture with plastic wrap to prevent skin from forming.
Refrigerate until cold. Serve with whipped topping if desired.

    Bad
    I ended up with a soupy mess. The pudding never set and I even used more corn starch. Something is missing. Most recipes call for eggs or sweetened condensed milk. - 4/18/13
