Introduction
This receipe cooks up like a dream freezes wonderfully and is a great breakfast. I make a batch take to work and throw it in the freezer, microwave it for 3 to 4 mintues from frozen and you have a great filling breakfast.Throw whatever veggies you have into it. Ingredients

10 eggs
4 egg whites
1 cup cottage cheese
8 ounces cheddar cheese
2 cups chopped onions
2 cups chopped peppers (red, green, yellow)
3 Tbsp Parmesan cheese
10 tbsp bacon bits
1 pkg frozen spinach
You can replace the bacon bits with canned crab; or shrimp or make this a vegetarian dish
I like using Portabella Mushrooms for a meaty veggie taste.
Directions
Spray pie plates with Pam and cook in 350 degree oven until golden on top I cook mine a little longer personal choice. Cut into 12 pieces and freeze in zip lock bags.
