Introduction

Number of Servings: 8

Ingredients

    1 lb 93% lean ground turkey
    6- whole wheat lasagne noodles(like Hodson Mill)
    1 zucchini, 1 in dice
    1 eggplant, 1 in dice
    12 oz part skim ricotta cheese
    1 egg white (or 1/4 c egg beaters)
    1 jar spaghetti sauce(like Ragu)
    1.5 c reduced fat Italian blend cheese(like Sargento)
    1 tbsp fresh basil leaves chopped
    1 tsp each dried oregano and rosemary


Directions

1. cook ground turkey until no longer pink and drain all fat.
2. meanwhile chop veggies and set aside. Mix ricotta 1 cup of the Italian blend cheese with egg white and spices.
3. add 1/2 c. tomato sauce to the bottom of a 6 qt slow cooker(an oval one is best for this recipe). layer 2 noodles over tomato sauce, 1/3 cheese mixture, ground turkey, veggies and tomato sauce. repeat layers 2 more times. add remainder of tomato sauce over top and add remainder of Italian blend cheese.
4. cook for 3-4 hours on low. serve with a green salad.

    Incredible!
    I don't like zucchini or eggplant, so I took those out and just went super simple - no egg either which also helped to drop the calories down to 251. Anyway, this was so yummy. Can't wait to eat the leftovers. - 9/29/20
