Ingredients

    2 14-oz blocks extra firm tofu
    1/2 cup canola oil for dough, plus 1/2 cup for frying
    1 Tbsp garlic powder
    1 Tbsp onion powder
    1 Tbsp mustard powder
    1 1/2 tsp ground cumin
    1/2 tsp turmeric
    1 Tbsp paprika
    3 medium onions, chopped
    1 red bell pepper, chopped fine
    1 poblano or green bell pepper, chopped fine
    1/2 tsp salt
    3/4 cup artificial bacon bits
    1 package (170 gm) Yves Meatless Canadian Bacon, diced
    1 tsp liquid smoke
    1 1/2 cup garbanzo flour
    1/2 cup gluten flour

Directions

In food processor, mix tofu, onion powder, garlic powder, mustard powder, cumin, turmeric, paprika, salt. Place in large bowl.
Heat 2 Tbsp oil in frying pan and fry chopped onions and peppers until soft. Add these to tofu mixture along with salt, liquid smoke, bacon bits, Canadian bacon. Stir until thoroughly mixed.
Stir in garbanzo flour and gluten flour. Let sit at room temperature for 20 minutes, or may hold in refrigerator until ready to fry.
Drop by 1/2 cupfuls into heated, oiled frying pan, adding enough oil to prevent sticking. Flatten with spatula to desired thickness. Fry 5 to 7 minutes per side.
Good served with salsa or vegan sour cream.
