* *HyVee Old Fashioned Oats, .25 cup
* Baking Powder, 2 tsp
* *Salt Sense, Iodized Salt, .5 tsp
* Cinnamon, ground, 3 tsp
* Banana, fresh, 1 small
* *almond milk--silk unsweetened, .75 cup
* *Eggland's Best Large Egg, 1 serving
* *Canola Oil, 2 tbsp
* Lemon juice, 1 tbsp
* Strawberries, fresh, 1 cup, sliced
* **Flax Seed Meal (ground flax), 6 tbsp
* Nutmeg, ground, 1 tsp
* Vanilla Extract, 1 tsp
Directions
Preheat oven to 400°F. Line 12 muffin cups with liners.
Mix dry ingredients in a bowl. Mix wet ingredients in a seperate bowl. Add dry ingredients to wet, then add the strawberries. Fill liners with batter.
Bake muffins until tester inserted into center comes out clean, about 20 minutes. Cool muffins of rack for 10 minutes. Enjoy!
