Ingredients

    Zucchini Bread

    Servings: 12
    3 whole eggs
    1-3/4 cups sugar
    3 cups flour
    1 cup vegetable oil
    1/2 teaspoon salt
    1 teaspoon vanilla
    1 teaspoon lemon juice
    2 teaspoons cinnamon
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/2 cup raisins, seedless
    1/2 cup chopped walnuts
    1-1/2 cups zucchini, shredded

    EGG WASH:
    1 whole egg
    1/3 cup milk
    1 teaspoon sugar





Directions

Preheat oven to 350 degrees.

Egg wash:
Blend 1 egg, milk and one teaspoon of sugar.

Combine sugar, eggs, and oil and mix in processor. In another bowl, mix flour and all dry ingredients. Add the dry ingredients to sugar, oil, and egg mixture slowly. Carefully fold in zucchini and mix well.

Fill two 9" cake pans, lightly greased and floured, and bake at 350 degrees for 55 minutes. Brush with egg wash and bake 2 more minutes.

Cut each loaf into 12 wedges and serve warm. Yield: 2 loaves
