Ingredients

3 eggs
1 cup granulated sugar
2 tsp maple extract
1 tbsp maple syrup
½ cup butter, softened
2 cups all purpose flour
2 tsp baking powder
½ cup shelled pecans
Directions
Preheat your pizzelle iron. Mine takes about 15 minutes to heat up. While the iron is getting hot, grind the pecans to very small pieces. I use a mini food chopper for this. Add all the ingredients to a large bowl and beat until thoroughly combined. The batter should be somewhat thick and rather sticky. It should stick pretty well to a spoon.
My iron makes two cookies at a time. Drop a teaspoon of batter onto each side of the pizzelle iron (you will probably need to use a second spoon to help scrape the batter from the spoon) and close the lid. They are done when you don’t really see steam rising any longer from the iron. Lift the iron lid and carefully remove the pizzelles with a fork. I usually let mine cool on a clean cookie sheet before putting them away in a tall narrow Rubbermaid container.
Makes 48 pizzelles.
