Number of Servings: 4

Ingredients

    2 cups cut okra, fresh or frozen
    1 medium onion, chopped
    2 large tomatoes, chopped
    1 seeded, chopped hot pepper OR red pepper flakes to taste
    1 tsp. sugar
    1/2 tsp black pepper
    1 beef bouillon cube
    1/2 cup water
    2 tbsp olive oil

Directions

Using a heavy frying pan, heat oil and cook okra until no longer "ropey".
Add onion and pepper, cook until tender.
Add tomatoes and seasonings.
Dissolve bouillon cube in warm water and add to pan.
Cover and cook on low about 30 minutes or until okra is done.

    I make somthing similar and call it bhindi bhaji (which means okra curry). I add tumeric and cumin (a little whole and some ground) and some garlic. I use very little water to cook the okra and a dash of lemon juice to assist with removing the stickyness (add just before okra is cooked). YUM - 8/29/08

    I love okra and this is excellent. I often use a 16 ounce bag of frozen whole okra, some bell pepper slices and banana pepper rings. First I saute onions; add tomatoes and peppers; put okra on top. Add a little water if dry, cover and simmer until okra is tender but still bright green-no slime. - 2/12/13

    I can't wait to try this! I'll get all of the healthful benefits of it to as my hubby doesn't like okra. I am from Tennessee originally so I come from the south/country and I love tomatoes and okra but this is the first recipe I ever come across! I WILL try it soon! - 8/29/08

    i make this using frozen okra, and i let them sit in boiling water for a few minutes so they are partially cooked before using the frying pan the combine all the ingredients. (i like the tomatoes crunchy, so i put them in after i turn the stove off, and cover for about a minute) - 8/29/08
