Quick and easy and good on a hot day. Quinoa is known as the "super grain". Quick and easy and good on a hot day. Quinoa is known as the "super grain".
Number of Servings: 7


    1 1/2 c water with chicken bullion flavor
    3/4 c quinoa
    19 oz black beans
    12 oz corn
    3 cloves garlic
    1 bunch green onions
    1 tsp oil
    1/2 tsp cumin spice
    1/2 tsp cayenne pepper
    1/2 tsp celery salt
    salt and pepper to taste


Boil water with bullion and spices then add quinoa. Cook covered for 15 minutes, then let it sit covered for an additional 5 mins.
While this is boiling, heat oil in large skillet and add 3 minced garlic cloves, then onions. Finally once sauteed, add corn, beans and finally cooked quinoa.

Serving Size: Makes 7 one cup servings
