Introduction

Shoyu Chicken is one of the easy staple meat dishes in Hawaii. The Marinade is traditionally done in a 1 part Soy sauce, 1 part water, 1 part brown or white sugar, ginger and garlic to taste. My version uses low sodium soy sauce and rice vinegar to lower the sodium, and Splenda Brown Sugar Blend, for a lower sugar content. I used boneless thighs, but you can use any type of chicken. Ingredients

    Marinade:
    3 T Reduced Sodium Soy Sauce (Shoyu)
    3 T Plain Rice Vinegar
    1/4 c. Water
    1 tsp Fresh grated ginger root (more or less to taste preferences)
    1 tsp Crushed garlic (more or less to taste preferences)
    2 T Splenda Brown Sugar Blend

    2 lb Boneless, skinless chicken thighs, visible fat trimmed.

    1 T Toasted sesame seeds
    1/4 c. Chopped green onions

Directions

Combine marinade ingredients in a bowl.

Grilling:
Marinade chicken for at least 1 hour, over night is preferred. Remove and set used marinade aside. Grill chicken. Place marinade in small sauce pan and heat to a boil. You may add a little corn starch to help thicken the marinade. When serving the chicken, spoon sauce over and garnish with toasted sesame seeds and chopped green onions.

Baking:
For best results, marinade chicken first.
Heat oven to 350 degrees. Place chicken pieces in a baking dish and pour marinade over. Bake for 35-40 minutes. Serve with sauce spooned over and garnish with toasted sesame seeds and chopped green onions.

Simmered: Crock Pot
Place all ingredients in a 4-6 quart crock pot, cook on low for 8 hours, or high for 4 hours. Remove chicken and arrange on a platter. Liquid in pot may be thickened with a little cornstarch. Spoon over chicken and garnish with toasted sesame seeds and chopped green onions.

Simmered: Stove Top
Same as crock pot except bring to a boil in a large sauce pan, then turn down to simmer. Cook for 30-45 minutes.

When you simmer, you can used Frozen chicken parts, just increase the cooking times by about 15 minutes on the stove top, and only the low heat setting for the crock pot.
