Introduction

Number of Servings: 6

Ingredients

    1/2 Tbsp unsalted butter
    1/2 Tbsp extra virgin olive oil
    3/4 cup diced zucchini (one medium zucchini)
    1 large summer squash, diced
    corn kernels from 2 medium-sized ears of fresh sweet corn
    1 cup canned lima beans, drained (and rinsed for less sodium)
    pinch of salt
    freshly cracked pepper to taste

Directions

1. Heat the butter and oil in a saucepan over medium heat until the butter is melted. Sauté the zucchini, squash and corn until softened and beginning to brown (5-8 minutes).
2. Add the lima beans and stir until beans are heated through (1-2 minutes)
3. Season with salt and pepper. Serve immediately.
