Ingredients

Extra Virgin Olive Oil (1 Tbsp)
Onion (3 oz)
Garlic (1 tsp)
Baby Artichoke Hearts (14 oz can)
Purdue Southwest Chicken Shortcuts (1 pkg)
Earth Balance Buttery Spread (1/2 Tbsp)
Fat Free Milk (1/2 cup)
Lundberg Alfredo Risotto (1pkg)
Directions
1. Start cooking Risotto according to package directions. You'll need the Earth Balance (or other butter substitute) and the fat free milk.
2. While the risotto is cooking, saute the onion in the EVOO. Add garlic and saute for 1 more minute. Add the baby artichoke hearts and chicken and heat through.
3. Top one serving of risotto with one serving of chicken and artichoke mixture.
