Introduction

Ingredients

    1 cup uncooked instant brown rice
    1/2 cup thinly sliced green onions
    1 medium red bell pepper, coarsely chopped
    1 clove garlic, minced
    2 cups low sodium chicken broth
    1 can (14 oz) lite coconut milk
    1 tbsp lime juice
    1/2 tsp Salt Sense
    1/8 tsp ground red pepper
    1/8 tsp turmeric
    1 lb firm white fish fillets, cut into 1 inch pieces
    1 tsp chopped dried cilantro

Directions

1. In large saucepan, combine all ingredients except fish. Bring to a boil.

2. Add fish and cilantro. Reduce heat, simmer 5-8 minutes or until fish flakes easily with fork, stirring occasionally.
