Ingredients

    1/2 medium onion chopped
    2 garlic cloves chopped
    1 cup chopped tomatoes
    1 medium zuccinni chopped
    1 medium yellow squah chopped
    8oz mushrooms chopped
    1 bell pepper chopped
    1 cup frozen corn
    1 cup frozen peas
    2 cups mashed potatoes
    1 tsp salt
    1 tsp pepper
    1/2 tsp oregano
    1/2 cup chicken broth
    2 tbsp Balslamic vinager
    1 tsp soy sauce


    Sauce topping

    4 tbs Miracle Whip sald dressing
    1 tbsp Parmeson cheese
    Rasberry vinagerette to taste
    1 tsp pepper

Directions

Sautee onions and garlic until soft, add the bell bepper and continue to stir abiut 3 minutes. Add tomatoes and continue to stir. Add corn and peas and mushrooms and simmer for 5 minutes add in chickem broth, salt, pepper, oregano, Soy Sauce and Balslamic Vinager. Simmer until most of the broth is gone. Move to refrigerator and let cool.

Meanwhile make enough mashed potatoes for 2 cups. Also cool in refrigerator for an hour. Mix the potatoes in a bowl with the choped vegetables and form into 1/2 to 1 inch patties Place on baking sheet and put in oven at 350 for 30 minutes. Remove from the oven and let cool.

When ready to eat coat fry pan with non stick spray and fry patties until browned Top with sauce and serve. These veggie patties also make a great sandwich. They will hold in the freezer for about a week
