    1 cup organic Lacinato kale leaves, ribs removed
    1 cup red cabbage, shredded
    1/2 organic cucumber, sliced
    Quarter of medium red bell pepper, diced
    5 jumbo black olives
    4-5 tblspns basic vinegrette

Directions

Marinate kale for 30 minutes in basic vinegrette;
add remaining veggies; toss well to coat
