Introduction

A change to a similar salad that I had in Spain. A change to a similar salad that I had in Spain.
Number of Servings: 6

Ingredients

    1 c. uncooked long grain brown rice
    1 c. chopped tomatoes
    1 c. chopped cucumber

    Dressing:
    1/2 c. olive oil
    1/4 c. fresh squeezed lemon juice (about 2 lemons)
    1 T. basil
    1/2 t. minced garlic

Directions

Cook brown rice as directed on package.
As brown rice is cooking, mix the ingredients for the dressing together and store in refrigerator for one hour so flavors can mix.
Allow to cool completely.
Mix in tomatoes and cucumber.
Pour dressing over rice/veggie mix and stir.
Enjoy!
