Introduction

Lovely potato soup with mashed white beans and cabbage. Your family will never know! Lovely potato soup with mashed white beans and cabbage. Your family will never know!
Number of Servings: 15

Ingredients

    7 russet potatoes, halved and sliced thin
    1 onion, diced
    3 stalks celery, chopped
    1 1/2 cups white beans (or one can), mashed
    1 medium head of cabbage, sliced
    chicken broth or water to cover
    1 stalk rosemary
    1 Tablespoon fresh thyme
    1 smoked sausage (optional)
    1 cup milk
    3/4 c flour
    salt and pepper to taste


Directions

Saute onions and celery in butter. When softened, add remaining ingredients except sausage, milk and flour. When everything is softened, add the sausage to warm. Meanwhile, whisk milk and flour together to form a slurry. Add to potatoes to desired thickness, mashing potatoes and cabbage slightly.
