Ingredients

    -1 Onion
    -1 Green Peppers chopped
    -2 Red Peppers chopped
    -1.25 lbs of Jennie Extra Lean Ground Turkey
    -Hunts Tomato Sauce 8 oz
    -Pacific Organic Foods Low Sodium Roasted Red Pepper -Soup (Depending on how soupy you want it 1.5 - 2 cups) the calories reflect 1.5 cups
    -Instant Brown Rice Cooked Organic Bowls (You can substitute with 1 c. of brown rice I just use this to save time. In fact I love these bowls from Costco they are great and an AWESOME way to get brown rice in 90 seconds!)

    -Deep Saute Pan
    -Casserole Dish (standard size)

Directions

PREHEAT OVEN TO 350.

1. Yellow onion with Ground Turkey. To save on calories I use fat free Olive Oil Cooking spray to grease saute pan. (I usually like to add a little salt and pepper during this phase, as well.)

2. While the turkey is browning, chop peppers. Add peppers to the pan once the turkey is completely cooked.

3. Once you've added the peppers, pop your rice in the microwave for 90 seconds and then stir it into the pan. At this point, you should change your heat setting to low.

4. Add tomato sauce and roasted red pepper soup to the saute pan. Let sit for a minute while you spray the casserole dish with pam or olive oil cooking spray.

5. Add mix to the casserole dish and cook at 350 for 10-15 minutes.

***Please note this is more of a soupy consistency rather than a casserole consistency, but the recipe I modified it from called for cheese on the top and I did not want to include that. You can always add cheese to the top, but it is not included in the calories.

6. I eat mine with 2 tbsp of Light Sour Cream and it's delicious! (Not included in the calories).
