Introduction

Ingredients

    3.5 c whole wheat flour
    1/3 c vital wheat gluten
    1T yeast
    2.5 cups of water 120 degrees
    1T salt
    1T lemon juice
    1/3 c honey
    1/3 c coconut oil
    2-3 c whole wheat flour

Directions

Mix yeast, gluten and 3.5c flour, add water mix for a minute with dough hook but scraping sides. Cover bowl with wet towel and let rest for 10 minutes. Add the salt, lemon juice, honey and coconut oil mix for 2 minutes (be careful it will slosh a round). Add the 2-3 cups of flour slowly until combined and still slightly sticky but pulls away from the sides of the bowl. Knead for 8-10 minutes. Put dough on an OILED counter or cutting board. Press dough into a 8x12 inch rectangle (or close) roll up into a loaf 8 inches wide. Press into an 8 inch loaf pan. Put in warm oven (100 degrees) and let rise for 15 minutes, then turn oven on to 350 degrees and let bake for 30 minutes.
