Ingredients

    1 Medium head of Cauliflower, cut into florets, cooked & drained (or 24 ounces of frozen, prepared cauliflower)
    2 Cups Diced Cooked Honey Ham (or other baked ham)
    1 - 4 1/2 ounce sliced Mushrooms, drained
    1 - 2 ounce jar diced Pimentos, drained
    1/4 Cup Panko Bread Crumbs (Progresso or other brand)
    2 TBSP chopped Onion
    3 TBSP Smart Balance Buttery Spread, divided
    2 TBSP Whole Wheat Flour
    1/2 tsp salt
    1/2 tsp white pepper
    1 Cup Skim or Non-fat Milk
    1/2 Cup 2% Cheddar Cheese
    *Pam Cooking Spray

Directions

Saute chopped onion in 2 TBSP of Smart Balance Buttery Spread until tender. Stir in Flour, Salt & Pepper; stir until smooth.

Slowly stir in Non-Fat Milk; cook & stir for approximately 2 minutes or until thick and bubbly.

Remove from heat & stir in Cheese until melted. Fold in Cauliflower, Diced Ham, Mushrooms, & Pimientos. Pour into a greased (sprayed with cooking spray) 2 quart casserole dish.

Cover & bake at 350 degrees for 20 minutes. Meanwhile, melt remaining 1/2 TBSP butter & stir into the 1/4 Cup of Panko Bread Crumbs. After casserole has baked for 20 minutes, remove from oven and uncover.

Sprinkle buttered bread crumbs over the casserole and continue to bake for 10 minutes.
