This easy and delicious recipe is heart-healthy. Goes well with a nice green salad and rice or potatoes, or green beans. I like the Alaskan wild salmon filets from the frozen foods section. Ingredients

    Salmon Filet (large enough for 2 servings)
    1/4 cup olive oil
    1/8 cup lite soy sauce
    1/4 tsp dried dill weed
    Juice from 1/2 lemon (reserve other half of lemon to serve on the side, if desired)

Directions

Combine all ingredients except for the salmon in a small bowl and mix well. Place whole salmon filet on a sheet of aluminum foil. Brush with the sauce mixture. Wrap salmon in foil, and wrap again in another sheet of foil to make sure there are no leaks. Place the foil packet on the grill at about 300 degrees or medium-low. Grill for 5 minutes on each side, or until flesh is opaque. Do not overcook. Remove from foil and serve.
