Ingredients

    6 cups cubed rye bread (about 8 slices)
    3 cups chopped Granny Smith apples (about 2)
    1 cup finely chopped onions
    1/2 lb lean corned beef, chopped
    16 oz jar sauerkraut, drained and rinsed
    1/2 cup fat free sour cream
    1/4 cup prepared horseradish
    3 oz (3/4 cup) shredded reduced fat swiss cheese

Directions

1. Preheat oven to 375 degrees. Spray 13x9 inch (3 qt) baking dish with cooking spray. Please 3 cups of the bread cubes in baking dish.

2. In large bow, combine apples, onions, corned beef, sauerkraut, sour cream and horseradish; mix well. Spoon over bread cubes; press lightly. Top with remaining bread cubes. Sprinkle with cheese. Cover tightly with foil that has been sprayed with cooking spray.

3. Bake for 55-60 minutes or until apples are tender and mixture is thoroughly heated.
