Ingredients

    1 cup soy flour
    1 tbsp baking powder
    1 tbsp flax seed, ground
    1 scoop protein powder, unflavored or vanilla
    1 tbsp Splenda
    1 tsp cinnamon, ground
    1 egg
    1 cup skim or lowfat milk
    1/3 cup water
    1 tbsp vanilla extract
    1 tbsp butter, melted

Directions

Mix all dry ingredients in a bowl. Beat egg, vanilla extract and milk together; add to dry ingredients. Add melted butter and water. Using a large cookie scoop, cook pancakes until golden brown then turn and cook on other side. Serve with sugar free syrup or jam. Net carbs=7.2
