My husband asks for this dish often because of his love for mushrooms. Made with turkey sausage, it’s a healthier low-calorie breakfast that is sure to please, and is easy to prepare! Ingredients

Olive oil & buttered flavored cooking sprays
1 c. baby bella sliced mushrooms
1 c. baby spinach
Salt & pepper (to taste, optional)
1/4 c. cooked ground turkey sausage
1/2 c. liquid egg substitute
1/4 c. fresh tomato, chopped
1 T. light sour cream
1/2 t. salsa (optional)
Directions
Cook the ground turkey sausage, and set aside. (I cook a 16 oz tube-size package, portion out, and then freeze for later use)
In a preheated pan sprayed with both the olive oil & butter flavored cooking sprays, add 1 c. sliced baby bella mushrooms. Spray top of mushrooms with both cooking sprays, and sauté for approximately 2-3 minutes. Mushrooms will have cooked down a bit.
Add 1 c. fresh baby spinach to mushrooms, and sprinkle lightly with salt & pepper if desired. Spray again with both cooking sprays, and sauté until spinach has cooked down and reduced in size (approx. 1-2 minutes).
Add 1/2 c. liquid egg substitute, and 1/4 c. cooked turkey sausage to the mushrooms & spinach, spraying once more with both cooking sprays. Stir and cook until eggs are cooked thoroughly.
Serve with fresh-diced tomatoes & sour cream on top. Add salsa, if desired.
