Introduction

Chicken roasted on a bed of sweet potato with thyme and lemon. Potatoes roasted in 2 tbsp olive oil.

Ingredients

    whole chicken (giblets removed)
    3 sweet potatoes, chopped
    4 potatoes in their skins
    2 tbsp olive oil
    2 tsp lemon juice few sprigs of thyme- optional

Directions

heat the oven to gas mark 5
wash the chicken
put the sweet potato in the roasting tin
put the chicken on the top and pour some water, lemon juice and add a few sprigs of fresh time

put the olive oil and potatoes in a seperate dish.

Cook the chicken as per the instructions, or 30 minutes per pound (500g) plus an additional 30 minutes until the juices run clear, or you have confirmed with a meat thermometer it is cooked.

Allow bird to rest before carving

Add vegetables etc as required.
