Introduction

Fat-free, low carb refried "beans" using eggplant :) Fat-free, low carb refried "beans" using eggplant :)
Number of Servings: 2

Ingredients

    2 cups diced eggplant
    1/4 cup minced onion
    1 clove garlic, pressed or minced
    2 tbsp tomato paste
    1 tsp cumin
    1/2 tsp chili powder
    1/4 tsp oregano
    pinch red pepper flakes
    salt and pepper, to taste
    1/2 cup water

Directions

Lightly spritz pan with oil. Saute eggplant, onion, and garlic until soft and brown. Add in remaining ingredients and stir well. Bring to a boil, then reduce heat and cover. Simmer for 5-8 minutes, stirring occasionally, until eggplant is extremely soft and sauce has thickened.

Using a potato masher or immersion blender, mash/puree eggplant mixture until it resembles refried beans in texture. (this is optional - I minced my eggplant in 1/4 inch pieces and didn't have to mash it at all :)
