Ingredients

    2 Cups Better 'n' Eggs egg substitute
    2 Cups (1 frozen bag) Birds Eye Mixed Vegetables (Broccoli, Cauliflower, Carrots)
    1 Cup Hood , Carb Countdown Dairy Beverage, 2% Reduced Fat
    1 tsp Nutmeg, ground
    1 tsp Pepper, black
    2 tsp Kosher Salt, Morton Coarse
    2 cloves of Garlic, diced
    .25 cup Onions, raw, chopped
    1 tbsp Olive Oil
    .5 Cup Parmesan Cheese, grated
    No Stick Spray

Directions

Add 1 Tbls Olive oil to pan and heat. Add onion and garlic, saute until onions are transparent. Add Frozen Birdseye Mixed Vegetables and cook according to package directions. Using a 2 qt casserole dish, spray with No Stick spray, add eggs, milk, nutmeg, salt & pepper. Mix thoroughly Add cooked vegetables to egg mixture, sprinkle with Parmesan cheese. Bake at 350 F 30-35 minutes, then finish under broiler to brown. Slice into 8 pieces.

    Incredible!
    Made this for Brunch today. Only changed it a little...No nutmeg and used fresh asparagus, spinach and tomatoes for the veggies plus the onions and garlic. Greek seasoning and organic cheese. Plus I cooked it on top of the stove as I don't have an oven safe skillet.YUMMY! Will def make again! - 8/18/19
