Ingredients

    1 medium head of cauliflower
    32oz. 99% fat-free chicken broth
    1/4-1/2 tsp of Lawry's Seasoned Salt
    1/4 tsp garlic powder
    1 tsp dried oregano
    1-2 tsp salt
    1/2 cup fat-free Greek yogurt
    1/2 cup 2% milk
    2 tsp McCormick chicken base
    black pepper to taste

Directions

Cut the tough stem and green leaves from the bottom of the cauliflower and place it in a large pot, stem side down. Sprinkle with Lawry's, garlic powder, oregano, and salt. Pour the chicken stock around the cauliflower and cover the pot with a lid. Cook on medium-high heat until the cauliflower is soft and can easily be smashed into small pieces, about 15-20 min. At this point, I used an immersion blender to puree the cauliflower mixture until smooth, but you can use a blender. Just be sure to blend in batches and to remove the center lid to the blender and cover with a towel to prevent violent soup eruptions! Once the soup is smooth, put it back on the stovetop and add the yogurt, milk, and chicken base. Stir and adjust seasonings to your liking. I hope you enjoy it!
