Ingredients
-
4 Fish fillets
1Cup bread crumbs
1/4 Cup FF Yogurt
3 tbsp Light Mayo
1 Cup Bread Crumbs, plain (not all of this is actually used)
1 Medium Sweet Potato
1/4 Cup Low Fat Buttermilk
1 Tbsp Garlic Powder
1 Tbsp Cider Vinegar
1/4 Tbsp Olive oil
Salt and pepper to taste.
Red Pepper flakes (optional)
Directions
Pre-heat oven to 450
Cut the medium sweet potato into fry shaped wedges. I left the skin on.
Spread out on a cookie sheet, drizzle with olive oil. I very lightly salted them and added red pepper flakes.s
Put them into the oven.
Prepare fish.
In a flat dish pour in buttermilk.
In another flat dish mix bread crumbs and garlic powder, and if you're using salt and pepper add that too.
Dip fish in buttermilk, then the crumb mixture and place in a non-stick 9x13 pan or whatever will hold the fish.
Cook both for 15-20 minutes. The fish will not be crispy, but the flavor is very good.
While the fish and chips are cooking prepare the tartar sauce.
In a small bowl mix yogurt, mayo, and cider vinegar together
It doesn't taste exactly like tartar sauce, but it worked out pretty well.
Hope you enjoy..
