Part of the Eating Clean diet - this soup helps to shed excess water, bloating. Can be eaten every day but cannot add spices, salts or condiments to it. Ingredients

    6 large leeks
    1 large onion
    6 cups water (more if needed to cover vegetables in pot).

Directions

Prepare leeks by removing root end and majority of dark green leaves. Slice leeks into 1/4" round slices. Place in colandar and wash thoroughly to remove dirt.

Peel and slice onion, chop coursely. Add leeks and onion to large soup pot; add 6 or more cups of water to cover all. Bring to a boil; reduce to simmer for 30 minutes.

Using an immersion blender, blend in pot until smooth. Serve hot.

Keeps for 3 days in refrigerator, re-heat as needed.
