Ingredients

    Sweet Plantains, 15 oz
    Turkey, Ground turkey, 93% lean, 16 oz
    Onions, raw, 1 cup, chopped
    Green Peppers (bell peppers), 1 cup, chopped
    Garlic, 2 clove
    Tomatoes, red, ripe, raw, year round average, 1.5 cup, chopped or sliced
    Egg, fresh, 1 large
    Mozzarella Cheese, whole milk, 1 cup, shredded

Directions

Cook turkey with onions, peppers, gartlic, salt and pepper to taste and some of the tomato

Slice the plantains thin- place in a single layer on a baking tray and bake at 475 for 25 minutes

Beat egg

add a little of the egg to bottom of the pan and start by placing a layer of the cooked plantains and alternating that with the cooked turkey, tomatoes, and cheese, until you have two layers of filling and 3 layers of plantains. Sprinkle remaining cheese on top and add remaining egg

Bake at 350 for 45 minutes

Serving Size: Make in a 4 by 4 pan- cut into 9 slices
