Introduction

Just something I whipped up tonight for the first time. Just something I whipped up tonight for the first time.
Number of Servings: 2

Ingredients

    1 chicken breast, filleted in half
    2 tbsp Olive Oil
    1 tsp of Minced Garlic
    3/4 cup Pictsweet Seasoning Blend (Frozen Onion, Pepper, Celery, and Parsley)
    sprinkle Italian Seasoning
    Sprinkle Sea Salt
    Sprinkle Cracked Pepper
    2 tbsp of White Cooking Wine
    1/8 cup of warm water
    about 1 cup Fresh Spinach
    1/3 cup of crumbled feta cheese

Directions

Fillet chicken breast so that you have two thin slices. Season with Italian Seasonings, sea Salt, & Cracked Black Pepper to taste. On medium high heat, heat Olive Oil in a medium skillet (must have a lid). Saute Garlic & Onion mix until tender. Add seasoned chicken breast to skillet then add the cooking wine and water. Cover with lid, reduce heat to medium low, and let it cook for 20 minutes. No need to turn chicken. When the 20 minutes is up, check done-ness with a meat thermometer to ensure done-ness. When chicken is thoroughly cooked, plate chicken breast on two plates and pour about 2 tbsp of the sauce in the bottom of the skillet over each chicken breast. Turn the heat up to medium and add spinach. Saute until wilted. Add half of the spinach to the top of each chicken breast and top with feta cheese.

Serving Size: Makes two servings - 1 breast each
