Number of Servings: 4

Ingredients

    1 lb pork tenderloin, remove extra fat
    1 tsp garlic, mashed to paste
    1 tbl extra virgin olive oil
    1/2 tsp ground cumin
    1/4 tsp ground coriander
    1 tsp smoked paprika
    1/4 tsp ground ginger
    1/4 tsp turmeric
    1/4 tsp black pepper
    1 tsp lemon juice and zest or red wine vinegar
    salt and pepper to taste

Directions

Season pork with salt and pepper.

Mix garlic with pinch of salt. Add remaining ingredients, stir to mix. Spread all over pork. Let sit for 15 minutes to overnight.

Grill, saute, or roast meat until done.
