Introduction

This dish even though light can be very filling and served as a main dish. You also can ommit the chicken and add other veggies to make it a side dish or vegetarian entre. Ingredients

    1 1/2 cups dried Couscous (makes 3 cups prepared)
    1 1/2 cups water
    1/4 tsp sea salt
    1/2 tsp garlic powder
    1 medium cucumber
    1 medium tomato
    2 cups chicken breast meat, chopped
    6 tbsp light italin dressing
    1/4 crumbled feta


Directions

Boil water in a small sauce pan, remove from heat and stir in the couscous cover and let stand 5 min. Mean while chop the cucumber and tomato and place in a large casserol dish or bowl, add in chicken. When the couscous has absorbed all the water fluff it with a fork and add in the salt and garlic powder, then add to the vegtable chicken mixture. Stir in the italin dressing and feta.
Serve immediately or chill until ready to serve.
