Ingredients

    1 large onion, chopped
    1 red bell pepper, chopped
    1.5 pounds skinless, boneless chicken breasts, cut into chunks
    2 teaspoons minced garlic
    1 (28-oz) can cut-up, peeled tomatoes, undrained
    1 (12-oz) can tomato paste
    2 (16-oz) cans black beans, rinsed and drained
    2 (16-oz) cans white beans (Great Northern), rinsed and drained
    1-1.5 T chili powder
    3/4 tsp. oregano
    1/2 tsp. salt

Directions

Turn 6-qt. crock pot on high while preparing ingredients. In crock pot, mix all ingredients.

Cover, reduce heat to low and cook 5-6 hours.

Serving Size: Makes 8 appox. 1.5 cup servings
